Peanut Butter Bars
great tasting, healthy energy bar

We've made some changes as the original is a little too crumbly, plus we had to have chocolate.
Ingredients
- 1/2C butter
- 1C peanut butter (it works better with creamy)
- 1/2C sugar
- 1/2C brown sugar
- 1T milk
- 1t vanilla
- 2 eggs
- 1C flour
- 1/2t baking soda
- 1/4t baking powder
- 1/4t salt
- 1/4t cinnamon (optional)
- 1C chocolate chips (separated)
- 1/4C butterscotch chips (caramel chips work well too)
- 1 can condensed milk (you don't use the full can)
Directions
- in a medium size bowl, mix flour, baking soda, salt, baking powder cinnamon
- in a large size bowl, cream together the butter and peanut butter
- add the sugar and beat until combined
- add eggs, vanilla and milk and beat for 30-60s
- add flour mixture and 3/4C of the chocolate chips to peanut butter mixture and mix until combined
- lightly press the dough into a baking dish
- scatter remaining 1/4C chocolate chips and 1/4C butterscotch chips on top of the mixture and press them in so they are roughly 1/2 buried
- drizzle 1/4C to 1/2C of the condensed milk over the top of the mixture/chips (try to get a light but full coating over the top)
- bake at 350F for 22-25 minutes - the top should get light and fluffy and the condensed milk should crystallize and turn light brown
- Let the bars cool in a wire rack
